Rava sooji or Semolina is the coarse, purified wheat middlings of durum wheat. It forms an integral part of South Indian breakfast cuisine. Rava sooji is a high source of protein, very high in complex carbohydrates and fairly high in potassium, phosphorus, magnesium, calcium and fibre, with some iron, zinc, manganese and copper. Being a low-fat, high carbohydrate food, it offers a lot of energy for active and energetic people. Rava sooji can be used to make rava kesari, rawa halwa, rava laddu, upma, rava dosa, rava idli, rava uttapam, khichdi, pongal, etc. Rava sooji is often added to flour while making puri and bhatura dough.
