Chillies are ripened turn red and are dried and sold as condiments across various parts of the world. India is one of the leading producers of these red chillies. The chillies have a sharp flavour. They are really spicy and the intense heat is concentrated in the seeds. They are an excellent source of vitamin C but excess use of red chillies may cause indigestion and heartburn. Capsaicin, the chemical that makes chillies hot is known to reduce the risk of skin and stomach cancer. They contain more vitamin C than an orange. Red chillies are an excellent remedy for cold and sinus symptoms. Red chillies are used as a part of seasoning various indian dishes. They may be blended with coconut, groundnut or veggies to make chutneys. They are widely used to make powders like sambar powder, rasam powder, chutney podis, etc. They are also used to make long standing preserves like puliyogare gojju, red chilli paste,red chilli flakes, red chilli chutney, etc.
